Venison Sausage Fest~ A Family Affair

If Venison Loin is my first favorite cut of venison, coming in a close second would have to be the Venison Sausage that the family makes 2-3 times a year.  It's super tasty with hints of cinnamon, and very low in fat.
It's made from the meat of deer that are hunted on our property during deer hunting season.  This long standing family tradition is something to look forward to for kids and adults alike.






The venison is ground and mixed with ground pork and various seasonings and loaded into the sausage casings {we use cow intestines} after being cranked out through the sausage crank,




















then tied in links at various intervals......



and then pierced by the "littles", to let any air out of the casings.  
 
















The links are then hung for a day in a cool basement before they are vacuum sealed to become freezer ready.




Ready to cook, barbecue or to be used in a pasta dish as well.
